My concern for the local and global community has been evidenced through support of local farms, clean food, waste management, social justice for our workers and our impact on the environment. Climate change has happened faster than any of us ever imagined. As a chef and restaurant owner, we do what we can to minimize our big footprint, even in my small restaurants. We have always composted, reduced our waste, saved energy and water, turning off burners not in use, and regenerated anything that can be reused rather than disposed. The challenge is that cooks have prepared food over fire since the beginning of time. To make the shift from our current use of flames/gas fire to electric induction burners would be hard without funding to replace existing kitchens. *More importantly, if we were to open a new location, we would absolutely learn how to use alternative cooking methods and steer away from gas.* Thank you for considering the future with clean energy Reach Codes that support healthier new construction for the long term benefit of our community, both local and global.
